Notes on Grilling from The Fire Box ...
Gas Grills, unlike Wood Grills, cause
heat to gradually increase rather than diminish. A wood fire will flare up occasionally,
but is always on the decline unless additional wood is added. The Gas Grill, on the other
hand, has a constant source of fuel and when the grease catches fire things can get out of
control quickly. If this occurs, open the hood carefully and add water to the flare-ups.
Then close the hood and keep the fire under control. Don't lose the meat to the fire.
If you are having difficulty in controlling the temperature, take a
stick or some other item and prop the hood open about 1/2". There are hood holders
available for this purpose. This method will allow some of the heat to escape. Adjust the opening size to achieve the desired consistent temperature.
For those desiring a little 'extra' browning, the Gas Grill is excellent. Simply turn up
the flame to sear the meat. A good use of
this technique is at the beginning of cooking a brisket. Simply sear the outside of the
meat to seal in the juices. Then reduce the heat to normal cooking temperatures for the
duration of the cooking time. |
